The benefit of Edge is (probably) less tracking. Benefit of Chrome is hard to identify, tbh. I suppose they may be a couple of days quicker with the very bleeding edge of Chromium, but Edge seems to be up to date all the time. I don't know that you should uninstall Chrome, but there's certainly no longer any need to install Chrome.
Edge uses DirectX 12 APIs for GPU rendering, MS may be able to do the same for Edgium. The 4k video playback on Edge is butter smooth. MS has removed/replaced many Google specific stuff, there's a screenshot of a list out there. It has resulted in a more leaner chromium than chrome or other chromium based ones.
