I was going to start with fast.ai and I found two courses that seems to share the name but have rather different curriculum. The first is this one - https://course18.fast.ai/ Second is this one - https://course.fast.ai/ The first one isn't even listed on the main fast.ai website from what I see. What's the matter with that course and with which should I start?

Fast.ai is in a top down style so for me it is a god send. I end up having to build my own top down mental model for anything I learn to start with so this is perfect for me. If you learn better bottom up I would think it would seem to skip around and feel more chaotic.
