You can definitely do a bare metal install on a NUC. Put the image from https://github.com/home-assistant/operating-system/releases/download/4.10/hassos_intel-nuc-4.10.img.gz on a USB stick. Also use GParted from https://gparted.org/liveusb.php (image to another USB stick). Boot from the GParted USB stick, partition the internal SSD and then get to a command prompt and then do something like:
