With some googling I discovered that Intel RST is the issue, given it is a software RAID solution. Is it possible to set up the live environment so that it detects my SSD?

In order to disable Intel* RST, you need to access the BIOS and set SATA mode as IDE or AHCI, for this configuration you should contact the Equipment Manufacturer (Dell*) for the proper guidance on the BIOS. That's not true, Intel had submitted source to support RST on Linux. The code is available. The kernel developers just won't accept it because they lose the ability to handle ssd quirks, and other concerns. It's not proprietary, it's just bad. RST is unsafe by design, and the kernel developers won't support it.

In your BIOS, do you have something about AHCI or perhaps Intel RST? It may be under RAID type of settings, even though you have no RAID.
