DoH is annoying, DoT is easy to block (TCP port 853). The only mitigation at present is to block the IP's of the DoH servers; Cloudflare, Google, Firefox etc. and/or configure their clients to not use it. Brutal option would be to block TLS 1.3 traffic using Suricata or Snort.

13.11.2020 · You can usually block DoT in your OpenWrt router by blocking outgoing port 853. You can usually block DoH by blocking port 443, however that would also mean blocking most web sites. Note that if you do block port 853 in your router, iOS will give the user a warning that encrypted DNS is being blocked by the network!

My oldest is 10 years old and not heavy into computers so it is enough to keep them honest. I have rules that only allow UDP/TCP destination port 53 to go only to 1.1.1.3 (and 1.0.0.3 ).
