The IPv6 default route comes from the router RA, NOT DHCPv6. Not sure why you can't ping the router's FE80:: address. It should just work. I would recommend saving the router config and then resetting it. The defaults on OpenWrt are pretty good for IPv6.

You should check the settings of your other router. It may have a setting for delegating an IPv6 prefix to your OpenWrt device. If enabled on the upstream router OpenWrt should be able to configure a global IPv6 prefix on LAN automatically.
