There's a separate backup server available. So, I could run Ceph with only 1-confirm. That way, if a server dies, it can still operate until we get it back up. Should I go for a 3-node Ceph cluster? Edit: I'd prefer not to do the poor-man's sync (ZFS/Proxmox scheduled backups of a VM to another host). But, that is an option if it comes down to it.

Myself i would use a 10g switch, divided into two separate networks/vlans, one for ceph, one for backups and inter server traffic. And use the two 1g lag to switch for vm's internet traffic. Can also use the backup/interserver network for proxmox interface. As a good practice have the 10g networks behind there own router/firewall.
