The biggest caveat (and I think this goes for all proxmox single-disk installs) is that the proxmox installer will always wipe the boot disk(s). So if you find yourself needing to reinstall at some point, it's up to you to have some way of copying your VM data off the disk before reinstalling.

So, starting with the basics, my current setup consists of a single 500GB ssd for the OS and VMs, and a single 8TB hdd for media. Both are set up as separate ZFS pools.
