The same thing happens with my 7.1 virtual surround headphones. The sound/speaker settings will be in 5.1/7.1 but as soon as I enable spatial sound it changes to stereo. Is this normal? Is that how the spatial sound features work? They have to be configured in a stereo configuration and not 5.1/7.1? I could've sworn it wasn't doing that a week ago.

Using AirPods Pro if I swivel on my chair I can hear the lead vocals shifting between AirPods to give the perception the vocals are coming from the iPhone, but with the AirPods 3, they're just stereo. I've check the settings to make sure Spatial audio is on, and I've even gone into the settings in Music to make Atmos "Always On".

Was working a week ago and then stopped. Yes I've looked but mono is already off and yes I've tried unpairing. What's going on here?
