Go into the LAN network in settings. Find DHCP Mode and turn it to None. As others have said, it's in the Networks, then LAN settings. It can be set to DHCP Server, Relay, or None. However, not sure if it's a bug or feature, if you don't actually have a reachable DHCP server, the UDM Pro seems to take over automatically even if you set it to None.

I cannot for the life of me figure out how to get the UDM-Pro I just got to pass DNS IP addresses to DHCP clients on my LAN other than itself.
