Go to a web browser and enter the UDM pro IP address. Login there. Settings ( bottom icon - gear). Then Network Settings and then Location and Time. NTP settings will be there. The UniFi app allows you to change some of the basic security options, as well as some of the more advanced features of the UniFi Controller.

As for NTP, you can do the same but replace the dport 53 with the NTP port in the above commands. However, the UDM does not have an NTP server on it. So clients are just going to fail to contact the NTP server if you do that. If you really wanted to, you can run an NTP server on the UDM using a docker container.
