K am in the process of doing the same thing as you and still cannot get the DNS over TLS to verify. Followed instructions for stubby and unbound to the letter but no luck. Managed to get the DNS provider to switch to woody net or quad 9 but can't get the green checks for DNS over TLS. Switched back to default Google DNS as a result.
