So I have the files with correct NTFS-Access-Permissions on the original VM and do not need any SMB-Shares or FTP-accounts or don't have to pay attention to any firewall restrictions.

He says he knows it worked on January 15. My current strategy is to split the difference and move forward or backwards depending on the results. So restore the file from January 22, if it still has the missing data then restore the file from january 27, if that one is missing the data then try the file from january 25, etc etc.
