However, the reason you cannot edit the virtual disk size could either be related to the virtual disk controller being an IDE controller or - in most cases - because the VM has an active snapshot.

As I was doing some tests and creating new VMs yesterday, I noticed the selection for "Remove from Inventory" and "Delete from Disk" are both grayed out for all running VMs in vCenter. I did log into the ESXi hosts individually and they also exhibit the same issue, where those actions are not available for powered on VMs.
