I have not tried Etcher, but if it is good and works well for both systems, that is a good reason to use Etcher, since you don’t need different software for Windows and Manjaro.
Rufus dev here. The problem is that the Manjaro people put a bit too much faith in ISOHybrid, and seem to have forgotten that, yes, there are some people who want to create an UEFI bootable drive by simply copying the ISO files to a FAT32 file system (which is pretty much what Rufus does for UEFI boot).

Rufus and Etcher write Manjaro in DD mode. Therefore you do NOT get to choose the partition scheme yourself (hence why it's greyed out in Rufus) as the partition scheme you get is the one that the people who created the Manjaro ISOHybrid selected.. As such your assertion that you "need" GPT is incorrect. Even if you have a UEFI system, you don't need GPT to boot a media.
After converting from MBR to GPT, probably your installed Manjaro wont work, so you would need to prepare beforehand what to do in such a case. (eg, chroot using a live disk and installing GRUB in UEFI way) And Windows 8 if installed in MBR way, would need to be repaired/reinstalled in accordance to UEFI way.
