Thanks for this great guide. I have an older router that isn't supported by OpenWRT but I was able to track down a build of dd-wrt for it. I assume it should be able to do the same with it as well. Have you considered blocking DNS over TLS with a firewall rule on port 853? That way devices need to use your Pihole.

Network > Interfaces > LAN > Edit > DHCP Server tab > IPV6 Settings > Announced DNS Servers > Added the PiHole IPV6 address from the step above. I got Openwrt to advertise the PiHole IPV4 address as the DNS.
