It's a lot easier to run Windows in Proxmox than rolling your own hypervisor with virt-manager, but it's possible to run Ubuntu desktop on ZFS on the desktop 'bare metal' and use it daily, then visualize Windows when necessary. Proxmox uses Linux KVM / Qemu under the hood, so you can use virt-manager for similar results on a GUI system.

For using the Proxmox machine as a desktop PC with one of your VMs as the "main" display, yes, it does work, though it might be a bit tricky to setup at first. You setup hardware passthrough so that the Ubuntu VM would have direct access to the GPU, and to some of the USB ports.

Recently bought a NUC and after reading some posts, I am thinking about setting up Proxmox with Ubuntu 20.04 (desktop not server) on one VM and HASSOS on another. My reasoning is I really like that HASSOS has supervisor and the addon store and I’m not sure I want to go the Docker route yet (although I might experiment some in the Ubuntu install).
