You can also configure DNS servers per network in it's DHCP configuration - this is what clients that getting addresses via DHCP will use. Or you can configure client itself as static and set DNS there.

Force all DNS queries through PiHole ... however you should be able to adapt them for Sophos XG, Ubiquiti EdgeRouter, etc.

You really can't force all of them, some will have 8.8.8.8 or 1.1.1.1 hardcoded and will just stop working otherwise. But if you want, block outgoing traffic to common DNS servers in the firewall and see how it goes. I'm assuming you've already set custom DNS in UniFi configuration for each and every network?
