You can provide an address for the DNS server of each of your networks created within the unifi controller. Make it point to the pihole and that solves the first part of your problem. Now regarding the port forwarding in pfSense, I'm not exactly sure what goal you're pursuing.

With that I am able to use my piHole as DNS for any Vlan I may create that is under RFC 1918 Netorks range. I imagine that adGuard will use the default DNS port (UDP 53) if not you just need to make sure that the ports needed are defined on "DNS Ports" group and the protocol is set on the permission rule. So I currently have PiHole's conditional forwarding turned on for my x.local domain pointing to the gateway with don't forward unchecked. So DNS will hit the PiHole, blacklist and then be sent to the USG to be forwarded outside, or will be resolved locally by the USG. Problem is it's so wonky and doesn't really seem to work well at all.
