A fairly straightforward way to block certain sites such as Youtube is to use one of OpenWrt's adblock packages. It is possible to use the adblock package and its associated Luci web package to block Youtube by just adding the domains e.g. googlevideo.com youtu.be youtube.com

I installed adblock on my router OpenWrt with several blacklists. Ads on youtube videos are blocked with ublock installed on the browser.

Block YouTube ads at your OpenWRT router ... way that they serve videos, effectively bypassing all DNS-based ad blocking for YouTube apps.

blocking lists used with abp or ublock (e.g. easylist) have some nice entries to block youtube ads, social tracking and filters for non-english ad networks.
