Proxmox is based on Debian. VMs are good for testing? Sure, but they are perfectly fine for production. Do yourself a favor, get another disk, install proxmox on it and then build a VM using your current Ubuntu install as start point. TL;DR : don't do it. Install proxmox on another disk
