Proxmox with a single Ubuntu LXC with all your services there. This is essentially how I run my server for the most part, though I have a few LXC. I choose Proxmox because ZFS is just there out of the box and I use that for my big storage pool. I use VMs for Windows software so it's nice to have the KVM integration in the Proxmox GUI, etc.

06.12.2020 · My point is, you don’t need Proxmox if you want to run more than just HA on your NUC. You need Proxmox if you want to run multiple services in separate VM’s. Proxmox is based on Debian. VMs are good for testing? Sure, but they are perfectly fine for production. Do yourself a favor, get another disk, install proxmox on it and then build a VM using your current Ubuntu install as start point. TL;DR : don't do it. Install proxmox on another disk
