The thing with Docker is that the UI by default supports containers from specific sources (templates), but you can install any other container from the CLI. You don't install Gitlab on ESXi, you need a operating system that will be running it.

Comparing ESXi and unRAID is really an apples to oranges comparison. unRAID was initially built to provide storage services (like FreeNAS) and only recently added support for virtualization. This addition is quite cool, but the distro is still heavily build around setting up storage, providing storage, having redundancy with that storage, etc.

Hello guys I currently run an ESXI server with a couple of virtual machines (3x windows server 2016 and 1x Ubuntu).

UnRAID is pretty good and it is easy to use. I assume it is KVM based so you should get used to manage it. ESXi is nice, but it doesn't have "RAID" capabilities out of the box.
