UnRAID is pretty good and it is easy to use. I assume it is KVM based so you should get used to manage it. ESXi is nice, but it doesn't have "RAID" capabilities out of the box. The thing with Docker is that the UI by default supports containers from specific sources (templates), but you can install any other container from the CLI. You don't install Gitlab on ESXi, you need a operating system that will be running it.
