Unraid does have parts where the source code is available because they are building on GPL software, but the bits that make it different (GUI, etc) are all closed. Proxmox at its core is an L2 hypervisor, with its core mission being to provide a vm cloud infrastructure. Given your primary use case is deploying docker containers with only a single virtual machine, that seems like overkill. And you're going to have to put in a lot of customization to get it to match what you're doing with unRAID.
