If the WM was started, you can click the mouse anywhere on the root window to see a menu. I haven't used VNC in a very long time after discovering the NX protocol.

It looks like the ~/.vnc/xstartup file listed in the AskUbuntu link has a slightly different setup than the one we recommend:

Install ubuntu-desktop and VNC server ... tools sudo apt-get install gnome-core gnome-panel gnome-settings-daemon metacity ... Fix the VNC grey screen issue.
